Pompona Vanilla is an exceptionally rare species. Most vanilla is pollinated by humans, but pompona is pollinated by a species of bee that only lives in the Americas, and this batch was harvested in the Peruvian Amazon. The beans are typically triple the size of the more common planifolia vanilla bean.
The pompona vanilla used in this batch has notes of dried cherry, oak, and a rich, smoky finish.
