Mojito
The crown jewel of Cuban cocktails. While it's history remains a bit foggy, the trick to a great Mojito is clear: handle your mint with care. Muddling mint will cause it to bruise and release un-pleasant, muddy flavor. The epitome of refreshing, the Mojito offers a burst of tangy lime and cooling mint, ideal for quenching one’s thirst on a hot day. For a non-alcoholic variation, sub rum for N/A rum.
Make the cocktail

- Large mint leaves
- 3/4 oz
- Fresh lime juice
- 1 oz
- Simple syrup
- 2 oz
- White rum
- 2 oz
- Seltzer
- 1 dropper/dash
- All Day Aromatic Bitters
- Glass
- Collins with ice
- Garnish
- Spanked mint sprig and 2 dashes All Day Aromatic Bitters
Drop 6 mint leaves into collins glass and gently draw the leaves up the glass with a bar spoon. Add 2 mint leaves and remaining ingredients except seltzer to a cocktail shaker and then fill with ice. Shake with a fluid, strong motion. Add seltzer to shaker and strain into collins glass. Fill with ice.
For a non-alcoholic variation, use N/A rum.
